- 1 package (16 oz) bowtie (or other) pasta
- 1/2 package sliced pepperoni, chopped
- 1 teaspoon olive oil
- 1 cucumber, seeded and diced
- 1 cup shredded mozzarella cheese
- 1 can (15 oz) Italian-style diced tomatoes, drained
- 1/2 cup light Italian dressing
- Cook pasta according to package directions. Rinse with cool water.
- Combine noodles with remaining ingredients in a large bowl. Can let set for a while to allow flavors to blend or serve right away.
