Ingredients
- 2 to 2 1/4 cups flour (I actually used 1 cup wheat and 1.25 cups white)
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 1 stick butter -(oops I used 2. Maybe that was my problem. Now I'll have to make them again.)
- 1 medium ripe banana
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1 teaspoon vanilla
- 2 eggs
- 1/2 cup coconut flakes
- 2 cups chocolate chips (12 oz)
- 1 cup chopped cashews
Directions
- Preheat oven to 375. combine flour, baking soda, salt and cinnamon and set aside.
- beat butter, banana, and sugars until creamy
- beat in eggs and then add coconut.
- Add flour mixture using extra flour if needed.
- Stir in chocolate chips and cashews.
- Drop by rounded tablespoons onto an ungreased baking sheet (I always cover mine in parchment or a baking mat.)
- Bake 10-12 minutes until golden brown.
