Thought for sure this would be higher in calories, but I guess using turkey chili helped it out a lot. It is also from simple and delicious magazine. NO real changes except using turkey chili and lean ground beef.
- 1 cup uncooked elbow macaroni
- 1 lb. lean ground beef
- 1 green pepper, chopped
- 1 small onion, chopped
- 2 15 oz. cans chili with beans
- 1 11 oz. can corn, drained
- 1 cup shredded cheddar cheese
- Cook macaroni according to package directions.
- Meanwhile, in a large skillet, cook beef (or just toss in pre cooked like I did), green pepper and onion over medium heat until meat is no lnger pink; Drain. Stir in chili and corn. Drain macaroni; add to the skillet and heat through. Sprinkle with cheese.
