Ingredients
- 1 Tablespoon oil
- 2 Tablespoons cider vinegar
- 1/3 cup peach preserves
- 1/2 teaspoon salt
- 1 bag (6 oz.) baby spinach (I used regular spinach)
- 2 mangoes, diced (I only had 1 because my other went bad, but it was large - recipe says 2 cups)
- 1/2 cup very thinly sliced red onion
- 1/2 cup raisins
This is how I made it - I didn't feel like getting 2 bowls dirty, so I just mixed the first 4 ingredients with a whisk until well blended, then I added the mango and mixed that. Then I added the spinach, onion and raisins and tossed it all together.
