Spinach-Mango Salad

DH said that this salad "Rocks!"  That's a good sign right?  I'm pretty sure we had it before a long time ago.  It was pretty tasty.  The recipe comes from an old Betty Crocker recipe magazine.


Ingredients

  • 1 Tablespoon oil
  • 2 Tablespoons cider vinegar
  • 1/3 cup peach preserves
  • 1/2 teaspoon salt
  • 1 bag (6 oz.) baby spinach (I used regular spinach)
  • 2 mangoes, diced (I only had 1 because my other went bad,  but it was large - recipe says 2 cups)
  • 1/2 cup very thinly sliced red onion 
  • 1/2 cup raisins
This is how I made it - I didn't feel like getting 2 bowls dirty, so I just mixed the first 4 ingredients with a whisk until well blended, then I added the mango and mixed that.   Then I added the spinach, onion and raisins and tossed it all together.
