cheese sauce

This is the cheese sauce I used for the broccoli tonight. It is from the food nanny book, but is just your basic everyday cheese sauce. Very similar to what we make for tuna biscuit ring only on a smaller scale and minus the dry mustard.

  • 2 Tablespoons butter
  • 2 Tablespoons flour
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground white pepper
  • 1 cup milk
  • 1 cup shredded medium cheddar cheese
  1. Melt butter in a small saucepan over medium heat. Blend in the flour, salt and pepper. When the mixture is bubbly, quickly add the milk. Cook, stirring constantly until the mixture thickens and bubbles.
  2. Remove from heat and add cheese, stirring until smooth.
