Cranberry nut cinnamon chex mix

I've had a container of frozen orange juice concentrate in my fridge waiting for me to make this chex mix for 2 weeks now.  I finally got around to it today.  I did change it up.  I used more cereal, a bit more juice, less oil, and some cheerios rather than all chex.  The original recipe is on the back of the cinnamon chex box.  This was one of the better chex mixes I have tried.  A bit tangy with the orange juice concentrate and the cranberries, but still sweet enough with the brown sugar and the sweetness of the cinnamon chex.


Ingredients

  • 4 cups cheerios
  • 4 cups cinnamon chex
  • 1 cup walnut halves
  • 1/4 cup packed brown sugar
  • 1/3 cup frozen orange juice concentrate
  • 1 Tablespoon vegetable oil
  • 1/2 teaspoon cinnamon
  • 1/2 cup sweetened dried cranberries
Directions
  1. In a large bowl, mix cereal and walnuts set aside (I actually only mixed the cheerios and walnuts because I wanted them to take on more of the orange flavor, but I think if doing it again, I'd just put both cereals in at the same time.)
  2. In a microwavable 2 cup measuring cup, microwave brown sugar, orange juice concentrate, oil and cinnamon on high 1 minute.  Stire, microwave about 1 minute longer, stirring after 30 seconds, until mixture is hot.  (Mine was done at 1 minute 30 sec. but I added more juice (from 1/4 to 1/3 cup) so I did the extra 30 seconds.)  
  3. Pour orange juice mixture over the cereal mix and stir to coat evenly.
  4. Microwave uncovered on high 5 minutes, stirring every 2 minutes. (I microwaved the cheerios and sauce for 2 minutes then added the chex for the last 3.)    Stir in cranberries.  Spread on waxed paper or foil to cool.

  1. Thanks. I've been trying to come up with better snacks for after school. I particularly like this one because it isn't as sweet as some, and still has some fruit and nuts in it.
