Italian-style green beans

This was the veggie that they had paired with the Salmon in the simple and delicious magazine.  It was surprisingly good for a fresh green bean recipe.  Brandon congratulated me on making the green beans he ate growing up (basically just green beans and tomatoes -no olive, onion, or Italian dressing though ?)

Ingredients

  • 1 1/2 lbs. fresh green beans, trimmed
  • 2 plum tomatoes, chopped
  • 1 small red onion, thinly sliced
  • 1 can (3.8 ox) sliced olives, drained
  • 1/2 cup Italian salad dressing
  • Dash salt and pepper (Oops, I forgot these, and didn't miss them.  Plenty of flavor from the dressing.)
Directions

Place beans in a large pot and cover with water.  Bring to a boil.  Cover and cook for 4-6 minutes or until crisp-tender; (I did 6 because I like my green beans a bit less crisp, and a bit more tender.)  Drain beans and return to pot.  Add remaining ingredients and heat through.
