menu 5/20

Menu planning again. I was so excited during the week because my latest Healthy cooking magazine arrived so I thought planning would be a breeze. However, I can't find anything I want to make this week in the magazine. Boo. On the bright side, I did find a new blog that looks very promising. Trying out some recipes from there this week.



Thursday
B-cottage cheese and apple, toast with almond butter
L- beso mi queso, grapes, peas
d-Root beer barbecued beef sandwiches (PB jan 04 p 7), baby carrots, sweet peppers and celery with dip


Friday
B- chocolate bread pudding bowl
l-left over chili or nachos
d-lemon chicken salad, baked lemon pasta


Saturday
b-red berry risotto oatmeal
l-skillet mac and cheese add diced ham and peas
d-Tender grilled pork chops, scalloped potatoes, green beans provencale (HC p. 37)


Sunday
b-bagel, apple, yogurt
l- sandwich
d-Pizza rolls


Monday
b-applesauce oatmeal muffin (sp)
l- cheesy wrap (from HG)
d-Honey lime Enchiladas subbing sour cream for cream, cumin/chili powder


Tuesday
b-oatmeal
l- sauteed peppers and zucchini pita
d-Adobo chicken and potatoes

Wednesday
b-omlet, juice
l- boca burger
d-falafel see here for another picture


Yea, after much work today, I have a good idea of what is on for next week as well. That will make next week so much easier.

Must try these enchiladas but not this week since I already have some on the menu
also want to make Turkey tacos (love these and haven't had them in a while BC feb 06 p.45)
Would love sweet corn potluck pudding on a slow cooker day with a beef or pork dish (pb jan 04 p 59)
bread topped hamburger or stroganoff - some family recipes not on the blog.
Found another something to try edamame guacamole
