waffles

There was a waffle in my Healthy cooking magazine this month that was supposedly a "makeover waffle" because they traded out some applesauce for some oil.  It was a very basic recipe similar to one I've made before.   Of course I couldn't leave well enough alone.  I added vanilla and splenda because I eat them plain and actually an extra 1/4 cup flour because they seemed too thin.  They turned out to be a good, simple, quick waffle.

Ingredients

  • 2 cups flour
  • 1 Tablespoon baking powder
  • 1/2 teaspoon sale
  • 2 eggs - separated
  • 1 3/4 cups fat free milk
  • 1/4 cup canola oil
  • 1/4 cup unsweetened applesauce
  • 1 teaspoon vanilla
  • 2 Tablespoons splenda 
Directions
  1. In a large bowl, combine the flour, baking powder and salt.   Whisk in egg yolks, milk, oil and applesauce just until combined.
  2. In another bowl, beat egg whites until stiff peaks form.  Fold into batter.  Bake in preheated waffle iron.
